What would you Include in a Thanksgiving Dinner?

My mom is planning her first ever Thanksgiving dinner. Any suggestions on what to make & how to make it? (Besides turkey)
P.S.
My dad’s a vegetarian, so any ideas how to prepare the salmon?

    Salmon, yum. I live in the Northwest and we have our freezer full of salmon. The best way, in my family’s opinion, is to NOT poach it, but to cook it in olive oil on the stove top. Sear it, then turn the heat down and cook until its flaky. My son likes putting a brown sugar/soy sauce on it at the end as flavoring.

    The first thing that comes to mind for vegetarians is veggie lasagna.

    Roasted vegetables. Potatoes, carrots, squash, turnips. red onion. Chop, drizzle with olive oil, add fresh thyme, salt and pepper and roast in the oven.

    2 frozen bags of greenbeans, 3 cans of Campbell’s cream of mushroom soup, French fried onions.
    layer the mixture add a splash of milk and bake 350 for 45 minutes

    Smoked Salmon Pesto Pasta

    ounces smoked salmon, cut into small pieces
    1 onion, chopped
    1 clove crushed garlic
    2 cups sliced fresh mushrooms
    3/4 cup prepared basil pesto sauce
    3 tablespoons tomato paste
    2 tablespoons olive oil
    1 tablespoon chopped fresh basil
    1/4 cup water
    8 ounces spaghetti

    DIRECTIONS
    Cook pasta in a large pot of boiling water until al dente.
    In a skillet, heat olive oil over medium heat. Add onion, mushrooms, and garlic until onion is transparent and mushrooms are tender. Stir in tomato paste, pesto sauce, fresh basil, water, and smoked salmon; cook gently for 5 to10 minutes, or until desired consistency is achieved.
    Drain pasta. Serve sauce over noodles
