A good way to cook broccoli for Thanksgiving?

I know Broccoli isnt really a traditional side dish, but I cook every dish my family eats for Thanksgiving, and since we’re all overweight I wanted to make this years side dishes a little healthier.

What are some tasty ways to cook Broccoli? I think it’d be a little sad to serve a big bowl of steamed, unseasoned broccoli to my family, but I also dont want to add a bunch of fattening toppings.

Any suggestions?

    Stir fry broccoli with sesame seeds, onions, garlic, ginger, red pepper flakes, and add soysauce and stir a little more.
    A delicious Indian recipe I had at an Indian restaurant once.

    I always steam mine, and the manual for my steamer offers suggestions for herbs/spices to add in the steamer basket. For broccoli, they suggest cilantro, crushed red pepper, or tarragon.

    Not as exciting as butter or Hollandaise sauce, but not all plain either.

    CONFETTI BROCCOLI

    1 large bag broccoli florets (fresh, pre-washed)
    1 large red and yellow pepper
    Parmesan cheese
    bacon bits (dried brand, not fried, stays crispier)
    Italian dressing (any brand)

    Put broccoli florets in large bowl and place in the refrigerator until peppers are prepared. Set oven temperature to broil.
    Rinse peppers with cool water and place peppers on bare oven rack. No foil needed. You may want to place a pan with a little water in it on the rack under the peppers so when they begin to cook the pepper juice has somewhere to drip.

    Stay close to oven, check the peppers approximately every 1-2 minutes until the peppers have charring on their skin.

    Using an oven mitten, flip peppers on all sides until charred all over and semi-soft.

    Remove the peppers from the oven and allow to cool for approximately 5 minutes.

    Once cool, begin peeling and rubbing all the charred skin off of the pepper. Cut open the peppers; remove the seeds and stem on top and discard.

    Remove broccoli from refrigerator, dice and add peppers, add Parmesan cheese as desired; add the bacon bits and finally the Italian dressing (as much or as little as you like).

    Toss all together and enjoy!

    Steam the broccoli but pour melted butter sauce and a bit of garlic salt over top of it for flavor.

    Broccoli Casserole
    1 egg, beaten
    1 onion, finely chopped (may substitute dehydrated onions)
    8 ounces fat free sour cream
    1 10 1/2-ounce can cream of broccoli soup, undiluted
    1 10-ounce box frozen broccoli pieces, thawed
    1 8-ounce package corn bread stuffing, divided
    16 ounces grated cheese, divided
    2 tablespoons margarine

    Instructions:
    Preheat oven to 350 degrees. Spray casserole dish with cooking spray. In a large bowl, mix egg, onion, sour cream, soup, broccoli, half of stuffing, and half of cheese. Pour into casserole dish. Mix remainder of stuffing and cheese and add margarine. Mix well and spread over top of casserole. Bake for 30 minutes or until light brown. Variation: Cooked yellow squash may be substituted for broccoli.

    ***I use half squash and broccoli in this recipe.

    Steam it and add some melted margarine (not butter) over it as you serve it and it will be great.. Also try to cut the stems off as much as possible and only eat the heads.. Those are the best and nutritious for you.. Feel for you my family is on the heavy side.. But after all it’s THANKSGIVING…. Splurge some.. But I love brocoili and i never get any complaints when i make it this way. My 3 yr old will eat it
