I need suggestions for side dishes for Thanksgiving. What recipe are you trying out this year or what side dish do you need to have at your Thanksgiving?

We’re having garlic mashed potatoes, bacon gravy, homemade stuffing, grilled asparagus, French bread with balsamic and olive oil dipping sauce, and a mixed green salad with feta, and a balsamic vinaigrette. I might also make my pasta salad. I’m not sure yet. I only have a couple days to decide before the kids and grandkids get here for our early T-day.

I’m trying some Gourmet Mushroom Risotto this year.

    INGREDIENTS
    6 cups chicken broth, divided
    3 tablespoons olive oil, divided
1 pound portobello mushrooms, thinly sliced
1 pound white mushrooms, thinly sliced
    2 shallots, diced
    1 1/2 cups Arborio rice
    1/2 cup dry white wine
    sea salt to taste
freshly ground black pepper to taste
    3 tablespoons finely chopped chives
    4 tablespoons butter
1/3 cup freshly grated Parmesan cheese
    DIRECTIONS
In a saucepan, warm the broth over low heat.
Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.
Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. Add 1/2 cup broth to the rice, and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.
Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan. Season with salt and pepper to taste.

    THANKSGIVING WILD RICE AND MUSHROOM
    DRESSING

    2 c. cooked wild rice
    2 c. cooked white rice
    4 strips bacon
    1 med. onion, chopped
    1/2 tsp. thyme
    1 bay leaf
    2 tbsp. finely minced parsley
1 lg. can sliced mushrooms with liquid
    Salt and pepper to taste
    1/4 to 1/2 c. chicken broth

Cook rices according to package instructions. Saute bacon until crispy; remove and crumble. Saute onions in bacon drippings until soft and yellow. Add remaining ingredients using enough chicken broth (duck is better!) for a moist dressing. Season with salt and pepper. (I added some sage, also.) Bake 30 minutes at 325 degrees. Excellent with turkey, ducks, or other game birds. Serves 8.
