You can slice them up and fry them like regular white potatoes. You can make a regular sweet potato pie. You do it just like a regular pumpkin pie, but use mashed sweet potatoes. (It’s a southern thang).

if you use a couple lbs for your baked potatoes… that leaves enough for about 13 pies.

They keep for a long time as long as they are cool and dry so don’t worry. I like them just baked instead of a regular potato – with either butter and brown sugar or some sour cream and salsa on top. It’s also yummy to slice them, toss with a little olive oil and seasoning and bake them till they are brown and crispy outside.

Sweet potatoes keep well if they are stored in a cool, dry place. Plan to serve them with your evening meals in the upcoming weeks. They taste good with ham, beef or chicken. I like to cook a sweet potato in the microwave. Wash it off, don’t peel it. Put it in a plastic sandwich bag. Poke some holes thru the bag, into the sweet potato with a fork. Microwave it for 4 minutes or so, until it “gives” when you mash down on it. Serve with a little butter on it or sprinkle with brown sugar. Yummy!

If you want some great recipes just go online. There are so many sites to check out for what ever your need may be. Here are a few of my favoirites: http://www.kraft.com., http://www.bettycrocker.com, http://www.foodnetwork.com, http://www.allrecipes.com., http://www.pastrywiz.com. These are just a few but all of them are wonderful. Most of them you can join for free and even start your own personal recipe box to make it even easier to get to your favorites and start cooking!! Enjoy and Happy Thanksgiving. I also wanted to let you know that you can always boil and freeze your sweet potatoes for later use. Just remember to not over boil them and to cut them in pretty big chunks. Let cool before freezing. If all else fails pass some along to friends and co-workers, or even the local food bank!! : ) Good Luck!!

SWEET POTATO MUFFINS
2-1/2 c. unbleached all-purpose flour
1/3 c. packed dark brown sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. (2 medium) mashed cooked sweet potatoes
1-1/3 c. buttermilk
1/4 c. (1 stick) unsalted butter, melted
2 lg. eggs
Preheat the oven to 400 F. Lightly butter 12 muffin cups or coat with non-stick cooking spray. In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. Stir until well blended. In a small bowl, whisk together the sweet potatoes, buttermilk, melted butter and eggs. Add to the dry ingredients all at once and fold just until evenly moistened. Do not over-mix. Divide the batter evenly among the muffin cups. Bake until a toothpick inserted in the centers come out clean. (20 to 22 minutes.) Cool on a wire rack before removing from the pan.
LOUISIANA SWEET POTATO PANCAKES
3/4 pound sweet potatoes
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter, melted
Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes. Drain, and immediately immerse in cold water to loosen skins. Drain, remove skins, chop, and mash. In a medium bowl, sift together flour, baking powder, salt, and nutmeg. Mix mashed sweet potatoes, eggs, milk and butter in a separate medium bowl. Blend sweet potato mixture into the flour mixture to form a batter. Preheat a lightly greased griddle over medium-high heat. Drop batter mixture onto the prepared griddle by heaping tablespoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.

We are using Umbraco as our CMS offering. Mainly because it fits the type of client we are aiming at a certain price point. Also because it is the best .NET open source CMS that we found.
They are smaller and don’t require so many features or fine grain control on security etc.
But of course there are other clients who are prepared to pay for off the shelf features and the license fee that comes with Sitecore or Episerver.
Right now Umbraco is helping us on our way. But as soon as that client comes along who needs that bit more and is prepared to pay the license fee for it, then that’s fine with us.
