Thanksgiving?

i sent my husband to the flea market this morning to get me a few sweet patatoes to make with our Thanksgiving dinner… he came home with like 15 pounds of them!

does anyone know of different things to make with them?

all i was gonna make with them was baked sweet patatoes and a sweet patatoe cream cheese pie.

    You can slice them up and fry them like regular white potatoes. You can make a regular sweet potato pie. You do it just like a regular pumpkin pie, but use mashed sweet potatoes. (It’s a southern thang).

    if you use a couple lbs for your baked potatoes… that leaves enough for about 13 pies.

    They keep for a long time as long as they are cool and dry so don’t worry. I like them just baked instead of a regular potato – with either butter and brown sugar or some sour cream and salsa on top. It’s also yummy to slice them, toss with a little olive oil and seasoning and bake them till they are brown and crispy outside.

    15 pounds? WOW! You could always make baked sweet pototoes. Just fix them like you would a regular potatoes. You could always go to allrecipes.com and see what other ideas you can come up with. Good luck!

    Sweet potatoes keep well if they are stored in a cool, dry place. Plan to serve them with your evening meals in the upcoming weeks. They taste good with ham, beef or chicken. I like to cook a sweet potato in the microwave. Wash it off, don’t peel it. Put it in a plastic sandwich bag. Poke some holes thru the bag, into the sweet potato with a fork. Microwave it for 4 minutes or so, until it “gives” when you mash down on it. Serve with a little butter on it or sprinkle with brown sugar. Yummy!

    Sweet Potato Fries

    Cooking spray
    2 large sweet potatoes, peeled and cut into wedges
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper

    Preheat oven to 400 degrees F.

    Coat a large baking sheet with cooking spray.
    Arrange potato wedges on prepared baking sheet in 1 layer and coat them with cooking spray. Sprinkle potatoes with salt and black pepper. Roast 30 minutes, until tender and golden brown.

Enjoy and Happy Thanksgiving. I also wanted to let you know that you can always boil and freeze your sweet potatoes for later use. Just remember to not over boil them and to cut them in pretty big chunks. Let cool before freezing.     1/3 c. packed dark brown sugar
    2 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt

    LOUISIANA SWEET POTATO PANCAKES

    3/4 pound sweet potatoes
    1 1/2 cups all-purpose flour
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1/2 teaspoon ground nutmeg
    2 eggs, beaten
    1 1/2 cups milk
    1/4 cup butter, melted

    Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes. Drain, and immediately immerse in cold water to loosen skins. Drain, remove skins, chop, and mash. In a medium bowl, sift together flour, baking powder, salt, and nutmeg. Mix mashed sweet potatoes, eggs, milk and butter in a separate medium bowl. Blend sweet potato mixture into the flour mixture to form a batter. Preheat a lightly greased griddle over medium-high heat. Drop batter mixture onto the prepared griddle by heaping tablespoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.

    We are using Umbraco as our CMS offering. Mainly because it fits the type of client we are aiming at a certain price point. Also because it is the best .NET open source CMS that we found.

    They are smaller and don’t require so many features or fine grain control on security etc.

    But of course there are other clients who are prepared to pay for off the shelf features and the license fee that comes with Sitecore or Episerver.

    Right now Umbraco is helping us on our way. But as soon as that client comes along who needs that bit more and is prepared to pay the license fee for it, then that’s fine with us.
