The Lion dance can be performed mostly doing auspicious occasions like the opening of a shop or an anniversary or festival. So it’s not necessarily restricted to just Chinese New Year. (Trust me, I’ve heard plenty of drums and cymbals crashing around.)
Furthermore, Lion dances are not just restricted to Chinese culture. There are also a variety of Lion Dances for the Japanese and Koreans as well. I’ll add in a link to this wikipage that has lenty of resources on various types of lion dances, their origins, cultures, and differences. As well as how the actual dance is like.
In Singapore we also hold Lion dance competitions ever year near CNY. I believe there are several videos on youtube that you can also watch.
